After a few less than exciting attempts at halibut pizza, I found this great recipe from Sitka Salmon Shares. It's light and simple, delicious but not overwhelming to the taste buds.
For the crust, I prefer to make my own by using this Paleo pizza crust recipe from Paleo Running Momma, but boxed mix from the store works great too. If you are in a time crunch, pick up pre-made pizza crust from the grocery store.
While making the sauce for this pizza yourself may seem intimidating, it is actually quite easy. Be patient though as it may take 10-ish minutes for it to become the right consistency. When first trying this recipe, I thought certainly I had failed but after a few extra minutes, the sauce came out perfect!
The combination of sauce and cheese provides just the right amount of flavor and sprinkling the parsley on top really makes it sing!
This pizza has been a hit for everyone I have made it for, including kids, so you just may consider making a double batch!
Preheat oven to 400° F.
NOTE: If making your own crust, preheat oven to required temp for baking the crust then bump up to 400° if needed when the crust is done.
Prepare pizza crust.
While the crust is baking, pull apart cooked halibut into small pieces and start making the sauce.
To make the sauce, melt butter over medium heat in sauté pan. Add minced shallot and cook until softened and translucent. Mix in the garlic and sauté until fragrant. Add the white wine into the pan and allow it to reduce by half. Stir in the whipping cream and cook until the mixture leaves a clean line in the pan when a spatula is dragged through it.
Season with salt, pepper, and lemon zest to taste and then let the sauce cool.
Spread the cooled sauce over the pre-baked dough. Sprinkle fish over top and cover with mozzarella and Parmesan cheese. Drizzle olive oil over the pizza and bake until cheese is bubbling and the crust has browned, about 10-12 minutes.
Garnish with parsley and let rest for 2-3 minutes before cutting and serving.
